Linzer Cookies. These came out so much better than I thought they were so I had to include this recipe in my blog. The cherry preserves are from Zabar’s store in Manhattan.
3/4 cup Earth Balance Vegan Buttery Sticks
1/2 cup organic sugar or a natural sugar substitute such as Truvia stevia blend
1 teaspoon ground cinnamon
1 large egg yolk
1 teaspoon vanilla extract
1 cup whole wheat pastry flour
3/4 cup almond flour
1/4 teaspoon fine sea salt
jam or preserves for filling (I used cherry preserves from Zabar’s)
confectioners’ sugar or glazing sugar, for dusting, melted chocolate
How To Stencil Cookies. While these cookies aren’t exactly the same as my logo Cinnamon Sweet Shoppe Cookie, they are very similar. They do take some time as you must clean the stencil with a damp cloth and completely dry them before each cookie.

1 cup sweetened flaked coconut
1 cup all-purpose flour
1 1/4 cups Confectioner’s Sugar
6 tablespoons Earth Balance Vegan Buttery Stick, softened
1 teaspoon vanilla extract
4 teaspoons milk of choice (I used almond in the video)
Mocha Brownie Cake. There are plenty of reasons to cut down on sugar other than the obvious one of high calories. Sugar accelerates the aging process, is bad for your heart and causes tooth decay. While you don’t have to give up sugar entirely, consuming it in moderation is ok.
The ingredients to make this recipe are:
For the cake
3/4 cup whole wheat pastry flour
3/4 teaspoon baking powder
1/2 teaspoon salt
4 -1/2 ounces semi-sweet or bittersweet chocolate, chopped (you can also use a combination of both chocolates. Remember that bittersweet has less sugar than semi-sweet)
2 -1/2 ounces of unsweetened chocolate, chopped
3 ounces Earth Balance Vegan Buttery sticks (or unsalted butter
5 large eggs
1 cup Truvia Cup for Cup Stevia blend
1 teaspoon pure vanilla extract
3 tablespoons fat free plain Greek yogurt
For the Ganache
1 -1/4 cups heavy cream
3 tablespoons Earth Vegan Buttery sticks (or unsalted butter)
3 tablespoons Truvia Cup for Cup Stevia blend
12 ounces bittersweet, semi-sweet, or a combination of both, chocolate chopped
1/4 cup hot strong brewed coffee
Can be stored in the refrigerator for up to 2 days.
The “secret” ingredient in this Cinnamon Spritz Cookie is a spice called Cardamon. Most grocery stores do sell this but it is on the pricey side.
