Vegan Snickers Candy

Not only are these snickers vegan, but they are healthier for you.  No refined sugars are added.

For the nougat:
1 cup almond butter
4 tablespoons maple syrup
2 tablespoons whole wheat flour
1/8 teaspoon salt

For the filling:
12 large, soft Medjool dates (18 small), pitted (about 3/4 cup packed)
1/3 cup water
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1 tablespoon coconut oil, melted
1/4 cup chopped peanuts

For the dark chocolate coating:
1 cup dark chocolate chips
1 teaspoon coconut oil

 

Chocolate Mocha Cookies with Trader Joe’s Coffee Flour

Chocolate Mocha Cookies
My new favorite ingredient is coffee flour.  This recipe is easy to make, not too sweet, vegan, and healthier for you.  Check out my video on Trader Joe’s Coffee Flour to learn more about it.

8 tablespoons (1 stick) vegan buttery “baking sticks,” (8 tablespoons), softened
¼ cup Maple Syrup
1 teaspoon pure vanilla extract
6 tablespoons coconut sugar
1 1/2 cups whole wheat pastry flour
4 tablespoons unsweetened cocoa powder
3 tablespoons coffee flour
Pinch ground cinnamon
½ teaspoon baking soda
½ teaspoon baking powder

Optional: you can add in 1 cup of chocolate chips and or nuts

Vegan French Toast

Vegan French Toast
This is a very easy and very good French Toast without using  eggs.  The banana gives it sweetness and has the thick texture needed to coat the bread.

1 banana
1/2 cup almond, soy, cashew, or coconut milk
1/2 teaspoon cinnamon
1 teaspoon vanilla
2 dates
4 slices bread

Almond Chocolate Chip Shortbread Cookies

You can enjoy these cookies without the processed ingredients found in most store bought brands.

14 Tbsp Earth Balance Vegan Buttery sticks, softened
1/2 cup Organic Sugar
1/2 tsp Almond Extract
2 cups Gluten Free 1-to-1 Baking Flour (In the video, I made mine non-gluten free using whole wheat pastry flour)
3/4 tsp ground Cinnamon
1/4 tsp Kosher Salt
1 cup almonds chopped (divided in half)
1/3 cup mini semi-sweet chocolate chips
8 oz Dark Chocolate Chips

Caramel Sauce – Vegan and Clean Eating

It sounds too good to be true but it’s not.  This is very good caramel sauce made with unrefined sugar and coconut cream.  It’s not as easy to find coconut cream however, many if not most, grocery stores do have it.  I buy mine at Trader Joes but they don’t have it in stock all of the time so when I see it, I stock up.

7 Tbsp coconut sugar
7 Tbsp Cold water
1/2 cup coconut cream
1/4 tsp vanilla extract
pinch of salt
