Gingerbread House 2017

This years gingerbread house is a new design.  I used a basic gingerbread house pattern that you can find anywhere and made the gingerbread from scratch using my Best Gingerbread Cookie Recipe

Candy Cane Crunch Milkshake

Most of my smoothies and shakes are on the healthier side.  This one is not but that’s ok.  You’re entitled to indulge every now and then and as long as it’s in moderation.

To make this shake you will need:

• 4 large scoops of vanilla ice cream
• 1 cup Cool Whip, thawed or frozen
• ¼ cup milk (almond milk)
• 3 regular sized candy canes, unwrapped
• ¼ cup chocolate chips

Gingerbread Chocolate Bark

I thought up this idea of gingerbread bark when I saw the “party bark” sold at Costco last month.  Since gingerbread is fitting with the holiday season, why not put it in bark?  To make this bark you will need gingerbread cookies and I, of course, recommend my Gingerbread Cookie recipe:

You will also need chocolate.  In the video, I used a combination of semi-sweet chocolate and bittersweet chocolate.  You can use milk chocolate or even white chocolate if you wish.

For an 8 inch by 8 inch pan, I used 10 ounces of chocolate.  If you use a larger pan, use enough chocolate to coat the bottom of the pan about 1/2 to 3/4 of an inch thick.  If the chocolate layer is too thin, it will crumble.  If it’s too thick, you’ll never be able to break it apart.  And that’s no fun.

You can use “melting chocolate” also known as candy melts if you really, really want to but first watch my video on why I don’t use them.



Vegan But Sinful “Eggnog”

Eggnog without the eggs.  It’s delicious and sweetened only with maple syrup.  No processed sugars or unhealthy ingredients but still sinful.

To make this recipe you will need:

2 cups of vanilla flavored almond, soy, or cashew milk. (If you don’t have vanilla flavored on hand, you can add 1/4 teaspoon of vanilla extract to the milk)
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 to 1/3 cup Brandy (optional)
2 1/2 tablespoons maple syrup

Makes 4 servings

Trader Joe’s Holiday Haul

My favorite part of the Christmas season are the cookies, candy and desserts.  That’s an unusual thing to say coming from me, the fitness freak.  But as I always say, consumed in moderation and combined with healthy meals and physical activity, I can still enjoy them.

This afternoon I went to Trader Joe’s to stock up on my favorite holiday treats.  And they’re everyone else’s favorites too because they were selling quickly.

Gingerbread Cake with Fresh Ginger (Clean Eating…without top

So I think I found the best gingerbread cake recipe…ever.  I was able to conform the recipe to a clean eating standard and if you replace the eggs with an egg replacer such as Ener g or aquafaba, it can be made vegan.  What I really love about this recipe is that it uses fresh ginger in addition to the powdered ginger.


The fresh ginger adds so much flavor to it.


260 grams Whole Wheat Pastry flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground black pepper
10 grams finely shredded fresh ginger
1/2 cup Earth Balance Vegan Buttery sticks or 1/2 cup unsalted butter, softened
100 grams Coconut Sugar
1 teaspoon good quality Stevia (or you can use 50 grams of raw sugar)
2 large eggs, at room temperature
1/2 cup unsulphured molasses (To prevent the molasses from sticking to the measuring cup, first spray the cup with a non stick vegetable spray.)
1 cup almond milk (any milk will work)


Once cooled, you can eat this just the way they are and keep it clean eating or add a topping.  I used a coconut cream topping.  To make the topping beat together

1 can of coconut cream
2 tablespoons honey (you can use maple syrup or brown rice syrup to make it vegan)
1 tsp vanilla extract.

Refrigerate topping to firm up before using.

Who says time and patience are needed to make large fancy gingerbread houses. These one dimensional gingerbread houses are approximately 5.5 inches in height and 5 inches wide at its largest point.  Decorated entirely with royal icing and Skittles.  They are now available at my Etsy store.
