Gingerbread House 2017

This years gingerbread house is a new design.  I used a basic gingerbread house pattern that you can find anywhere and made the gingerbread from scratch using my Best Gingerbread Cookie Recipe

Now that I’m working part-time, 24 hours per week, I have more time to make cookie decorating videos.  This cookie was made with leftover icing from a previous cookie project

Biscoff (Speculoos) Hamantaschen Cookies

Biscoff Hamantaschen Cookies
Purim is only a few days away but you can enjoy these cookies any time of the year.

½ cup Earth Balance Vegan Buttery Sticks or unsalted butter
¾ cup organic granulated sugar
1 egg
1 Tbsp almond milk (or any milk you choose)
1 tsp vanilla extract
1 ¼ cups whole wheat pastry flour, plus more if needed
¼ tsp baking powder
¼ tsp salt

Biscoff cookie spread for filling

1/2 cup dark chocolate, chopped pieces or chips
2 tsp vegetable oil

Patriotic Butterfly Gingerbread Cookies

These easy to make patriotic butterfly cookies are cute and impressive.  I made them freestyle, without using a template.  For the best gingerbread cookies, check out my recipe here

I use a scribe to even out the wet icing and to do the wet-on-wet technique.  If you don’t have one you can use a toothpick or a clean straight pin.

Finding Dory Gingerbread Cookies

Remind me again how long did we have to wait for a Finding Nemo sequel?  Too long.  To make these cookies I made a template and traced in the details with an edible marker. I also used my Best Gingerbread Cookie recipe found here

Flip The Bird Decorated Cookies

We all know someone we’d like to send these cookies to.  To be honest, they are one of my favorite cookies to make and also very easy.  It doesn’t take that much decorating skill either.  Very little royal icing is used.

To learn how to make the templates and icing take a look at my Birdhouse Cookies I used this picture to make the template.  For a woman’s hand I just extended the fingernail.

To make the ring, I used Gold gel paste color and various colors for the finger nails.IMG_3312IMG_3313 IMG_3310

And here they are made with gingerbread.  I just love the nail art.

The Finger Gingerbread

Clear piping gell was used to hold on the gems because royal icing underneath the gems would change the clarity and color of the gem.  I added sanding sugar on top of the purple nail and I used the wet-on-wet technique for the yellow nail.

If you look closely at these hands you’ll notice the mistake I made.  I forgot to polish the thumbnail.

Wonder Woman and Superman Decorated Cookies

For all of the real life superhero’s out there.  I made these gingerbread cookies using my favorite recipe which you can find at Best Gingerbread Cookie Recipe

To make these cookies I downloaded the superman logo and made a template.  To learn how I make templates and royal icing consistency, check out my  Birdhouse Cookies

I mostly used tips 1, 2, and 3 for outlining and piping and a small star tip for Wonder Woman’s belt.

Nutella YoYo’s (Nutella Cookie Sandwiches)

Everything tastes better with Nutella right?  Well, only if you like it.  This shortbread cookie is crispy and buttery. But the best part is the filling.  I topped them with chocolate ganache but they are good alone.

To make them you will need:

1-1/3 cups all-purpose flour, spooned into measuring cup and leveled-off with back edge of knife
1/3 cup cornstarch, packed
1/2 teaspoon baking powder
1/4 teaspoon salt
12 tablespoons (1-1/2 sticks) unsalted butter, softened
2/3 cup Confectioners’ sugar, packed
1 teaspoon vanilla extract
About 1/2 cup Nutella, or other chocolate-hazelnut spread

For the ganache:

4 ounces semi-sweet chocolate
1/2 cup heavy cream

Trader Joe’s Holiday Haul

My favorite part of the Christmas season are the cookies, candy and desserts.  That’s an unusual thing to say coming from me, the fitness freak.  But as I always say, consumed in moderation and combined with healthy meals and physical activity, I can still enjoy them.

This afternoon I went to Trader Joe’s to stock up on my favorite holiday treats.  And they’re everyone else’s favorites too because they were selling quickly.
