This is the best chocolate frosting I’ve ever tasted! I used cooked eggs to make the texture very creamy.
6 ounces dark chocolate (preferably 60% cacao), coarsely chopped
3 ½ ounces unsweetened, coarsely chopped
¾ cup plus 2 tablespoons (1 ¾ sticks) Earth Balance Vegan Buttery sticks
5 extra-large eggs
1 cup coconut/palm sugar
½ cup water
¼ teaspoon salt
Digital candy thermometer
Tip: If a recipe calls for half a batch of this frosting, halve the quantities listed for a full recipe, but use 3 full eggs.
Apple Cinnamon Coconut Water
Folks, plain coconut water is horrible! No one likes it but there are health benefits, nutrients, and electrolytes that make it tolerable to hold your nose and drink it up. It’s a much healthier alternative to Gatorade which has sodium, sugar and artificial flavors and colors. The store shelves also sell flavored coconut water. Some of it is good, such as the mango flavor, but the pineapple flavor is not much better than plain.
To flavor coconut water, manufacturers add in fruit juice which is made up of sugar and water. Most if not all of the vitamins, nutrients, and fiber are taken out. Here is my recipe to flavor coconut water and make it even healthier. In a blender, blend together:
6-8 ounces plain coconut water
1 medium apple
1/2 teaspoon ground cinnamon
Optional: If you are using apples that are not very sweet, you could add in a pinch of stevia
1/2 cup cocoa butter (You can purchase it here You can also use coconut oil)
1/2 to 3/4 cup coconut sugar
1 tbsp chocolate extract (Learn to make your own Chocolate Extract here You can use vanilla extract with good results but chocolate extract is better)
1 cup whole wheat pastry flour
1/2 cup cocoa powder
2 tsp baking powder
1/2 cup dark chocolate chips
Here is a nice refreshing change from ordinary lemonade. You can use fresh or frozen fruit, whatever you happen to have on hand. You can also use carbonated water rather than regular water but if you do that blend all of the ingredients together until smooth EXCEPT the carbonated water and then stir that in by hand. If you don’t stir it in separately, you’ll have a carbonated explosion on your counter.
4 cups cold water
⅔ cups sugar (I used Stevia blend)
⅓ cup freshly squeezed lemon juice
1 mango, peeled pitted and sliced
2 yellow peaches, peeled pitted and sliced
Try saying that 3 times fast. I like most of my recipes but this one is top notch! I used the best quality chocolate I could find. I wouldn’t exactly call this healthy but I did take some steps to make it less bad. It’s also flourless so it’s ok for those with gluten sensitivities.
3 cups Semi-Sweet Chocolate Chips
1 cup Bittersweet Chocolate Chips
2 ounces White Chocolate Baking Bar or White Chocolate Chips
2 sticks Smart Balance spread. (Any brand of real dairy butter or butter substitutes can be used. Using a healthier non-butter substitute just makes the cake less bad for you.)
8 large eggs, cold
1/4 teaspoon salt
1/2 cup full fat milk such as coconut milk, almond milk, whole milk, etc (you can even use heavy cream if you have that on hand)
Follow directions in video.
This cake should be kept refrigerated.
NOTE: It’s called a triple chocolate cake because it has 3 kinds of chocolate in it. But if you don’t like white chocolate, you can always make this a double chocolate cake and decorate with berries, nuts, or both instead.
I can think of so many reasons to make this and not just because Nutella is so good. Just the fact that it only requires 3 easy to find ingredients and can be enjoyed in less than 5 minutes are 2. It is flourless, gluten-free, perfect for a single serving and if you use my homemade clean eating Nutella recipe, it’s healthier.
To make this, you will need
1/4 cup hazelnut spread such as Nutella
1/2 tablespoon cocoa powder (either dutch process or regular)
A microwave safe mug
Follow directions in video and enjoy!
Here I have another healthy and delicious smoothie. Filled with antioxidants, protein, and fiber.
1 cup frozen strawberries
2 cup frozen mango
1 frozen banana
3/4 – 1 cup plain nonfat Greek yogurt
1 tablespoon ground flax see (also known as flax meal)
1 teaspoon ground ginger
1 teaspoon cinnamon
2 teaspoons chia seeds
The three main ingredients for this smoothie are super healthy for you. Ginger aids indigestion and migraines. Blueberries are super anti-oxidants and are high in fiber. Bananas provide potassium and other vitamins.
To make this smoothie you will need:
1 frozen banana
1 cup frozen blueberries
1 teaspoon fresh ginger, grated. (If you have a powerful blender you can put it in whole or cut up)
1/2 to 1 cup almond milk (depends on how thick you would like it)
Hey Blog Readers and Video Viewers! This post is the first in my new series of Smoothies and Beverages. In addition to my weekly baking videos, I’m going to be adding a weekly smoothie or beverage video. And just like my baking videos, some will be healthy and some not.
I hope you enjoy them and please leave feedback over at my Youtube channel. Also feel free to share the link with others.
To make this smoothie you will need a blender but I’m sure you already knew that.
5 raw almonds
1 red apple
(I like to use frozen bananas but that’s optional)
3/4 cup nonfat Greek yogurt
1/2 cup nonfat milk
1/4 teaspoon cinnamon
OPTIONAL: 1 scoop of vanilla protein powder
