Apple Crisp Pizza. You can make this a little bit healthier by either making your own pizza crust (clean eating, vegan, paleo, gluten free, etc), or you can purchase pre-made pizza crust at the health food store. Many pizza restaurants even sell pizza dough and some will make it gluten free. Same thing goes for caramel. I usually make my own and will hopefully make a video soon on how to make your own healthier caramel sauce.
Pastry for single-crust pie (9 inches)
2/3 cup coconut sugar
3 tablespoons whole wheat pastry flour
1 teaspoon ground Cinnamon
4 medium apples (like Gala, Fiji, Braeburn, Empire) peeled and diced into 1/4 inch pieces
1/2 cup whole wheat pastry flour
1/3 cup packed brown sugar (I used more coconut sugar in the video)
1/2 cup old-fashioned rolled oats
1 teaspoon ground cinnamon
1/4 cup vegan butter, softened (or you can used real butter)
1/2 cup caramel topping

White Chocolate Raspberry Eclairs
Fresh berries are almost back in season and I can’t think of a better way to enjoy them.
To make the eclairs:
- 1 cup water
- 6 tablespoons Earth Balance vegan buttery sticks or unsalted butter
- 1/4 teaspoon salt
- 1 cup sifted whole wheat pastry flour
- 4 eggs
To make the pastry cream:
- 6 tablespoons organic sugar
- 1/4 cup whole wheat pastry flour
- 1/2 teaspoon salt
- 1 cup milk (I used almond milk but any kind will work)
- 4 egg yolks
- 1 teaspoon Pure Vanilla Extract
- 2 tablespoons Earth Balance vegan buttery sticks or unsalted butter
- 3 ounces white chocolate, roughly chopped
- 1 cup fresh raspberries, sliced in halves
To make the raspberry glaze:
- 1 cup fresh raspberries
- 1 teaspoon organic sugar
- 2 cups confectioners’ sugar, sifted (make your own organic confectioner’s sugar)
- 2 tablespoons milk (I used almond milk but any kind will work)
Optional: sprinkles, non-pareils, etc for decoration
Who can say no to these delicious chocolate waffles? I can eat them anytime of day whether it’s for breakfast or dessert.

These Strawberry Shortcake Cookies are super duper crazy good. You can vary the berries and make it a multi-berry cookie aw well. When these cookies bake, they puff up and are very cakey.
For the cookie:
2 sticks Earth Balance Vegan Buttery sticks, softened (or unsalted butter)
3/4 cup sweetener of your choice ( I used a stevia blend but organic sugar can be used as well)
3 large eggs
1 tsp vanilla extract
1 cup plain Greek yogurt
4 1/2 cups whole wheat pastry flour or spelt flour
1 tbsp baking powder
1 tsp salt
2 cups sliced strawberries
Stevia or any other sweetener (to taste)
8 ounces reduced fat cream cheese, softened
1 tsp vanilla extract
1 tsp almond extract
2 -1/2 cups organic confectioner’s sugar (learn how to make your own here)
2 tbsp milk (I used almond milk but any will do)
We’re in the middle of a heat wave and these small chocolate covered yogurt bites are just the thing I needed. Easy to make and perfect to keep in your freezer.
You will need
2 cups of vanilla Greek yogurt. (You could also use Silk vegan yogurt)
3 tablespoons shaved bittersweet chocolate
1 cup chocolate chips or baking bar(for melting)
The past few years I’ve been wanting to do something for Shark Week but always came late to the game. Not this year. Today is the beginning of Shark week on the Discovery Channel. This is the picture I used to make a template.

Also known as French Palmiers, these mini cinnamon elephant ears are crispy and good. Also, easy to make and only require 3 ingredients.
1 puff pastry, thawed (you can make your own clean eating version or just buy Pepperidge Farm)
1 cup sugar, divided (I used half coconut palm and half organic cane sugar)
1/4 tsp cinnamon
Follow directions in above video. Wrapped in airtight container for cookies to remain fresh for up to a week.
I love making Blueberry Pie Puffs. They are easy to do, healthier for you and delicious. To make them, you will need a recipe of my blueberry filling and a recipe of my Easy To Make Pie Crust. Both are clean eating.
You also will need a cookie cutter of any shape or size you want. I used a round, scalloped 3 inch cutter in this video and they came out perfectly.
