Chocolate Fudge Cookies
Wanna impress someone bigly?  Make them these cookies.  This recipe uses 3 different kinds of chocolate and they taste great.

Makes 3 to 3 1/2 dozen so you will have enough for a lot of people

1 1/2 cups whole wheat pastry flour (all purpose can also be used)
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
8 ounces semisweet chocolate, broken into 1/2-ounce pieces
4 ounces unsweetened chocolate, broken into 1/2 ounce pieces
1 1/2 cups tightly packed brown sugar
12 tablespoons unsalted butter (I used Earth Balance Vegan Buttery Sticks)
1 teaspoon pure vanilla extract
3 eggs
I used a medium size cookie scoop and these cookies came out huge.

The weather has turned nice and nothing reminds me more of spring and summer than fruit themed desserts.  This is a perfect cake to serve at a barbecue or outdoor picnic.

Even though I usually use less sugar than what the recipe calls for, there is still a lot of it in here so I used half organic sugar and half Stevia blend in the cake.  As I mentioned in the video, many clean eating followers don’t particularly care for Stevia blends because it’s not pure stevia and it’s mixed with maltodextrin.  Maltodextrin is an ingredient found in real food (potatoes, corn, barley, etc) and it’s not chemically created so I’m ok with it.  It is processed but it’s a natural process using enzymes and acids that are found naturally in food.  Stevia blends measure cup for cup in place of sugar and even if you’re not 100% sold on using it, it’s still far better than Splenda.  If you don’t feel right about using it, then I would recommend using all organic sugar for this recipe.

*NOTE: In the video I baked my cake at 325 degrees for 1 and 1/2 hours but keep an eye on it because baking times will vary depending on the pan you use.  It may take less than that time.

For the cake
1 cup Earth Balance Vegan Buttery sticks at room temperature. (Smart Balance or any other brand will do. )
½ cup Spectrum Brand non-hydrogenated shortening
3 cups organic or raw sugar (I used half organic sugar and half stevia blend)
6 large eggs at room temperature
3 cups whole wheat pastry flour or spelt flour, sifted
½ teaspoon baking powder
⅛ teaspoon salt
1 cup full fat milk (I used cashew milk but any milk will do)
1 teaspoon vanilla extract
1 and ½ teaspoon lime zest  (If you can get hold of key lime zest that is even better)
⅓ cup fresh Key lime juice (I found this in Wal-Mart for less than $3.00 right next to the lemon and lime juice)

KEY LIME GLAZE
1 and ½ cups organic confectioners’ sugar (Make your own here)
3 tablespoons fresh Key lime juice
½ teaspoon vanilla extract
