No Bake Ghirardelli Chocolate Chews
If you’re in a hurry and don’t feel like pulling out the mixer then you will love these.  Other than the below ingredients, you will only need a pot on a stove.  Easy to make and very delicious.  And you will get plenty of chews.  This recipe makes around 60 chocolate chews.

2 cups organic sugar
1⁄2 cup  Earth Balance vegan buttery sticks or unsalted butter (for non-vegan version)
1⁄2 cup full fat milk such as almond milk, coconut milk, cashew milk
1 tablespoon maple syrup or honey (for non-vegan version)
1 cup Ghirardelli Bittersweet or semi-sweet chocolate chips
1 teaspoon vanilla extract
1⁄4 teaspoon almond extract
2 cups quick-cooking rolled oats
1 cup sweetened flaked coconut
1⁄2 cup coarsely chopped almonds (walnuts or pecans may also be used)

Chocolate Chip Energy Cookie Dough Bites.  They are gluten free and have zero refined ingredients in them.

1½ cups rolled oats
⅓ cup cashew butter, unsweetened and unsalted
¼ cup honey
1 teaspoon vanilla extract
pinch salt
2-3 tablespoons milk of choice (I used unsweetened almond milk)
⅓ cup mini chocolate chips

These brownies are very good and less bad for you.  They do have a slight coconut flavor from the coconut oil.  But you can substitute another oil in place if you if don’t like the taste of coconut.  I would recommend using an avocado oil.

• 1 cup and a separate bowl with 1/2 cup dark chocolate chips or bittersweet chocolate chips
• 1/4 cup + 2 tablespoons coconut oil
• 1 cup vanilla Greek yogurt
• 1 teaspoon vanilla extract
• 1/2 teaspoon salt
• 1/2 teaspoon baking soda
• 1/2 cup coconut sugar (also known as palm sugar or coconut/palm sugar)
• 3/4 cup oat flour just blend regular oats in your blender

Optional:  I topped my brownies with a small scoop of Halo Top chocolate ice cream.  Halo Top is a low sugar, low calorie, high protein ice cream. https://www.halotop.com


Passover Almond Chocolate Chip Cookies

Whenever I make a Passover treat the first thing I’m asked is if it’s made with Matzo Meal.  If Passover is not a holiday you celebrate, or if you’ve never had baked food made with Matzo Meal, then you don’t know how dry it makes cakes and cookies.

This recipe uses almond meal/almond flour which is made from 100% ground almond.

1 lb ground almonds
1 1⁄2 cups sugar
1⁄2 teaspoon salt
1⁄2 teaspoon cinnamon
2 eggs
4 egg whites
12 ounces semi-sweet or bittersweet chocolate chips (1 standard bag)

14 Tbsp Earth Balance Vegan Buttery sticks, softened
1/2 cup Organic Sugar
1/2 tsp Almond Extract
2 cups Gluten Free 1-to-1 Baking Flour (In the video, I made mine non-gluten free using whole wheat pastry flour)
3/4 tsp ground Cinnamon
1/4 tsp Kosher Salt
1 cup almonds chopped (divided in half)
1/3 cup mini semi-sweet chocolate chips
8 oz Dark Chocolate Chips

This buttercream recipe stands out from all of the others in that real food grade quality cocoa butter is one of the ingredients.  I’ve used cocoa butter in other recipes but not often because it’s very expensive and I can only find it on the internet.  To purchase food grade quality cocoa butter here is the link 

6tbsp cocoa butter,  melted and slightly cooled
1/2 cup unsweetened cocoa powder (more for darker, and i often use dark cocoa powder)
2  1/2 – 3 cups powdered sugar (depending how sweet you like it)

1/4-1/2 cup heavy cream (or coconut cream)
1/2 tsp chocolate extract (You can sub vanilla extract)

Jazz up Coconut Water With This Apple Cinnamon Recipe

Apple Cinnamon Coconut Water

Folks, plain coconut water is horrible!  No one likes it but there are health benefits, nutrients, and electrolytes that make it tolerable to hold your nose and drink it up.  It’s a much healthier alternative to Gatorade which has sodium, sugar and artificial flavors and colors. The store shelves also sell flavored coconut water.  Some of it is good, such as the mango flavor, but the pineapple flavor is not much better than plain.

To flavor coconut water, manufacturers add in fruit juice which is made up of sugar and water.  Most if not all of the vitamins, nutrients, and fiber are taken out.  Here is my recipe to flavor coconut water and make it even healthier.  In a blender, blend together:

6-8 ounces plain coconut water
1 medium apple
1/2 teaspoon ground cinnamon
Optional: If you are using apples that are not very sweet, you could add in a pinch of stevia


Chocolate Almond Cookies, Gluten Free

The title says it all.  A combination of chocolate and almond in a cookie.  Easy to make, gluten free, clean eating, and very good.  You can also add chocolate chips, nuts, dried fruit or shredded coconut into the dough if you choose.

8 oz. semisweet or bittersweet chocolate, chopped, or you can use 1 1/3 cups chocolate chips
2 Tbsp. Earth Balance Vegan butter spread or butter
1 ¼ cups almond meal (also known as almond flour)
2 eggs
¾ cup dry sweetener (I used a stevia blend but you can use sugar)
1 tsp vanilla extract
1 tsp  almond extract

4 Ingredient Chocolate Fudge Protein Brownies

I’m a runner and try to get in my protein shakes 1 to 2 hours before going for my run. On days I just don’t feel like pulling out the bulky Vitamix and the ingredients, I just eat one or two of these brownies. They are gluten free, vegan, and clean-eating.


2 cups of over-ripe mashed bananas (about 6 medium)
1 cup smooth nut butter (I used almond butter in the video)
1/2 cup chocolate protein powder
1/4 cup cocoa powder (I used dutch-process but natural can be used too)

1 cup almond butter
1 egg (to make this vegan: 2 tbsp flaxseed plus 3 tbsp water)
1/2 tsp sea salt
1/2 tsp baking soda
1/2 cup coconut palm sugar
1/2 tsp vanilla extract
1/2 tsp almond extract
1/2 up semi sweet or dark chocolate chips
