Mocha Brownie Cake (Reduced Sugar)

Mocha Brownie Cake. There are plenty of reasons to cut down on sugar other than the obvious one of high calories.  Sugar accelerates the aging process, is bad for your heart and causes tooth decay.   While you don’t have to give up sugar entirely, consuming it in moderation is ok.

The ingredients to make this recipe are:

For the cake
3/4 cup whole wheat pastry flour
3/4 teaspoon baking powder
1/2 teaspoon salt
4 -1/2 ounces semi-sweet or bittersweet chocolate, chopped (you can also use a combination of  both chocolates.  Remember that bittersweet has less sugar than semi-sweet)
2 -1/2 ounces of unsweetened chocolate, chopped
3 ounces Earth Balance Vegan Buttery sticks (or unsalted butter
5 large eggs
1 cup Truvia Cup for Cup Stevia blend
1 teaspoon pure vanilla extract
3 tablespoons fat free plain Greek yogurt

For the Ganache
1 -1/4 cups heavy cream
3 tablespoons Earth Vegan Buttery sticks (or unsalted butter)
3 tablespoons Truvia Cup for Cup Stevia blend
12 ounces bittersweet, semi-sweet, or a combination of both, chocolate chopped
1/4 cup hot strong brewed coffee

Can be stored in the refrigerator for up to 2 days.

Irish Soda Bread

Need a loaf of bread quick? This bread doesn’t have yeast and therefore it won’t take you all day to make it. In fact, it only has 4 ingredients!  What I loved the most about it, the crust is crisp.  This bread is best served with your favorite jam or preserves.

4 cups whole wheat pastry flour
1 teaspoon baking soda
1 1/2 teaspoons salt
2 cups buttermilk (I used reduced fat)


Buttermilk Scones

If you watched old episodes of the TV show Baking With Julia on PBS, you may recognize this recipe.  It’s from Julia Childs cookbook titled, Baking With Julia.

3 cups Whole Wheat Pastry flour
1/3 cup Organic Sugar
2 -1/2 tsp Baking powder
1/2 tsp Baking soda
3/4 tsp Salt
6 ounces cold Earth Balance Vegan Buttery Sticks, cut into small pieces (can use unsalted butter too)
1 cup (approximately) buttermilk (I used reduced fat)

(2 ounces) Earth Balance Vegan buttery Sticks or unsalted butter, melted, for brushing
Sugar for dusting

Optional: ground cinnamon, nuts, dried fruit

Homemade Croissants

Folks, there is nothing and I mean NOTHING like a homemade croissant.  Yes, they are time consuming to make and they also take some patience.  But they are the best tasting croissants you’ll ever try. I urge you to give them a try when you have a free day or two.

1 ounce yeast
3  3/4 cups cake flour (as in most of my recipes, I used whole wheat pastry flour)
1/3 cup sugar
2 tsp salt
1 cup whole milk (I used almond milk but any full fat milk can be used)

For the butter:

4  1/2 (1 pound, 2 ounces) cold unsalted butter cut into 1/2 inch.  (You can use Earth Balance, Smart Balance or any other substitute but make sure it is very cold)
2 tbsp flour
