Mixed Berry Cream Pie
It’s easy and inexpensive to get hold of locally grown fresh berries this time of the year so I’m taking advantage of it. To make this cream pie, you will need a few recipes.
Graham Cracker Pie Crust
French Pastry Cream
Fresh Strawberries and Blueberries (or any berry you want)
Make your own stabilized whipped cream
1 teaspoon unflavored gelatin
4 teaspoons cold water
1/4 cup confectioners sugar, sifted
1 cup cold heavy whipping cream
Combine gelatin and water in a small pot. Heat on low, stirring just until gelatin is dissolved. Remove from heat and cool.
In a mixer, on medium to high speed, beat the sugar and cream until it begins to thicken. Continue to beat and slowly add in the gelatin. Beat until whipped.
Chocolate Almond Oatmeal Bars.
I love quick, no bake recipes and this one only takes a handful of ingredients that you probably have in your pantry. You can use any kind of nut butter you have on hand. When using almond butter, I always like to add some almond extract to empower the flavor. And that it does do.
3/4 cup Earth Balance Vegan Buttery sticks (or you can use lightly salted butter)
1/2 cup coconut sugar (loosely packed brown sugar can be used in place of coconut sugar)
2- 1/2 cups oatmeal (quick cooking oats is preferred but not necessary)
3/4 cup dark or bittersweet chocolate chips
1/3 cup almond butter (peanut butter can be used in place)
If you are using almond butter, 1/2 tsp almond extract (skip this if you are using peanut butter or any other nut butter
If the chocolate is too thick, add in a little bit (about 1 tsp) of melted shortening to thin it)
