It was six years ago that I debuted these Santa Gingerbread Cookies on this blog. You can find it at Santa Baby and here is the picture from back then. These cookies have evolved slightly with the holly on the hat.

Chocolate Cupcakes. This recipe is from Zabar’s in New York City.
2 extra-large eggs, at room temperature
½ teaspoon pure vanilla extract
⅓ cup unsweetened Dutch-process cocoa powder
1 cup whole wheat pastry flour
1 teaspoon baking soda
¼ teaspoon kosher salt
6 tablespoons (3/4 stick) Earth Balance Vegan Buttery sticks, at room
temperature, plus extra for greasing the pan (can substitute unsalted butter)
1 cup dark brown sugar (can use coconut sugar)
⅓ cup sour cream (I used reduced fat in the video)
½ cup cold coffee or water
Not only are these snickers vegan, but they are healthier for you. No refined sugars are added.
For the nougat:
1 cup almond butter
4 tablespoons maple syrup
2 tablespoons whole wheat flour
1/8 teaspoon salt
For the filling:
12 large, soft Medjool dates (18 small), pitted (about 3/4 cup packed)
1/3 cup water
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1 tablespoon coconut oil, melted
1/4 cup chopped peanuts
For the dark chocolate coating:
1 cup dark chocolate chips
1 teaspoon coconut oil
Stabilized Whipped Cream Topping
One of my favorite dessert toppings is whipped cream. It’s light and fluffy with a buttery taste. You can use this in place of heavy buttercream icings on cakes, brownies and cupcakes. It’s simple to make with just a few ingredients.
1 teaspoon unflavored gelatin
4 teaspoons cold water
1 cup heavy whipping cream
1/4 cup sifted confectioner’s sugar (also known as icing sugar)
Chocolate Chip Energy Cookie Dough Bites. They are gluten free and have zero refined ingredients in them.
1½ cups rolled oats
⅓ cup cashew butter, unsweetened and unsalted
¼ cup honey
1 teaspoon vanilla extract
2-3 tablespoons milk of choice (I used unsweetened almond milk)

Homemade Graham Crackers
Store bought cookies may taste good but they are filled with hydrogenated fats and “white” ingredients like highly processed sugar and flour. Homemade cookies, in my opinion, taste so much better and are healthier for you.
It will be much easier for you to measure out the ingredients with a scale since there are fractions involved.
8 3/8 ounces graham flour
1 7/8 ounces whole wheat pastry flour
3 ounces coconut sugar (dark brown sugar can used instead)
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon ground cinnamon
3 ounces unsalted Earth Balance Vegan Buttery stick, cut into 1/4-inch cubes and chilled
2 1/4 ounces molasses
1 1/2 ounces almond, soy, cashew, or any full fat milk
1/2 teaspoon vanilla extract
Homemade Girl Scout Tagalong Cookies
No need to wait until the few weeks out of the year that Girl Scout cookies are for sale. You can make your own and make them healthier, vegan, and for less money.
1 cup almond flour
1/8 tsp salt (heaping tsp)
1/8 tsp baking soda
2 tbsp pure maple syrup or honey
1 1/2 tbsp coconut oil
Up to 2 level teaspoons milk of choice (you may or may not need this)
1 tsp pure vanilla extract
6 tbsp peanut butter (or any nut or seed butter of choice)
1/2 cup semi sweet or dark chocolate chips

When you’re in a hurry to make a treat, try these.
6 tablespoons Earth Balance Vegan Buttery Sticks (unsalted butter can be used in place)
1/2 cup creamy peanut butter
1-1/2 cups Coconut sugar (light brown sugar can be used in place)
2 large eggs
2 cups whole wheat pastry flour (all purpose flour can be used in place)
1 cup butterscotch chips
2 cups chocolate chips
9 x 13 inch pan lined with parchment paper and coated with with non-stick cooking spray.
Passover Matzoh Crack
Matzoh is the most boring food to eat. It tastes like cardboard and anyone who celebrates Passover, prepares their matzoh loaded with something on it. So here is a delicious treat that turns boring matzoh into an exciting treat.
5 pieces of matzo
1 cup Earth Balance Vegan buttery Sticks
1 cup brown sugar (make your own organic brown sugar here)
¼ cup water
1 bag of dark chocolate chips (or a combination of chips)
1 cup of chopped nuts
Optional: Coarse salt. You can add this to the matzoh after the nuts are spread out.
