Cinnamon Spritz Cookies

The “secret” ingredient in this Cinnamon Spritz Cookie is a spice called Cardamon.  Most grocery stores do sell this but it is on the pricey side.

2 cups whole wheat pastry flour
1 teaspoon cinnamon
1/4 teaspoon ground cardamon
1/4 teaspoon salt
2 sticks, Earth Balance Vegan Buttery Sticks (or you may use unsalted butter), softened at room temperature
3/4 cup organic sweetener or any natural sugar substitute such as a stevia blend
1 large egg

Filling: 1 container of Ricemellow Creme

 

Chocolate Espresso Sandwich Cookies

Easy to make chewy and chocolatey and made with whole food ingredients.  These chocolate espresso sandwich cookies will impress everyone.  Each cookie sandwich is filled with Ricemellow, a gluten free, vegan and corn syrup free fluff.

To make them you will need:

For the cookies
1/2 cup Earth Balance vegan buttery sticks
1/2 cup Spectrum brand shortening (any brand of non-hydrogenated shortening can be used)
1 1/2 cup organic brown sugar (learn to make your own here)
1 tsp vanilla extract
1/2 tsp kosher or sea salt
2 eggs
2 cup whole wheat pastry flour
1/2 cup dutch cocoa powder
2 tsp baking powder
1 1/2 tsp espresso powder (instant coffee powder can also be used)

For the Filling
1/2 cup Ricemellow
1/4 cup bittersweet chocolate chips or chunks
